Apple and Spice Teacake

Ingredients

 
180 g unsalted butter (softened)
95g soft brown sugar
2 teaspoons finely grated lemon zest
3 eggs lightly beaten
125g self raising flour
75 g wholemeal flour
1/2 teaspoon mixed spice
1/2 teaspoon cinnamon
125ml milk

410g tinned pie apple
25g flaked almonds
1 tablespoon soften brown sugar extra

Lovely Lemon Curd

Ingredients

 
4 lemons (rind and juice)
2 cups of castor sugar
5 eggs

110g butter

Method

·         Grate rind of lemons and squeeze out juice.

·         Put sugar, rind and juice, butter and beaten eggs into a large basin on top of a pan of simmering water.

·         Stir with a wooden spoon until thick and curd coats the back of the spoon.

·         Pour into warm sterile jars, cover, seal and label.

Yummy Raspberry Jam

Ingredients

1kg ripe raspberries

1kg white sugar

Method

·         In a heavy based saucepan, mix the raspberries and sugar.

·         Place in a cool, dark place overnight.

·         Stir over low heat until the sugar is dissolved.

·         Increase heat to high and bring the mixture to a full rolling boil.

Tim's Curry Rissoles

Ingredients

500 grams of mince
2-3 big tablespoons (about 1/5 the jar approx) of curry paste (Rogan Josh or Korma or the like)
Grated carrot
1 egg
Breadcrumbs

Method

·         Place everything except the breadcrumbs into a bowl and mix well with your hands.

·         Then slowly place the breadcrumbs in, about a tablespoon at a time mixing after each one until you have a consistency where the patties stick together (you can dust in flour if needed)

Tim's Beef Stroganoff

Ingredients

Butter
500 – 600 grams of beef cut into strips
1 onion
About 200 grams Button Mushrooms
2 beef stock cube
2 tablespoons of tomato paste
2/3 cup of water
Salt and pepper

Tim's Honey Chicken Wings

Ingredients

Use about 1 – 1.5 kg of Chicken wings
3 tablespoons of honey
3 tablespoons of tomato sauce
4 tablespoons of BBQ sauce
2/3 cup of sherry (any kind is fine, sweet, or medium probably best)
Dash of Tabasco (optional)
